SALT and PEPPER shumai
Sometimes we put a dish on because a few customers have requested it.
Sometimes its because it’s a dish I love and really want to put on the menu.
Sometimes its because your business partner loves something in his local Chippy and wants it given the “sixty” treatment.
In this case it was the latter, and when the challenge is crispy salt & pepper shumai, that’s a challenge I knew I wanted to take on.
I absolutely love Shumai, but the one thing I’m not a fan of, is the solid, bullet like, homogenous mass, 'looks like its never seen a pig' filling some of them contain.
Ours are filled with a 60/40 mix of premium minced pork and slow roast, pulled pork to give a balance in texture we think is just perfect.
Crisped to perfection and tossed in garlic and chilli, these shumai are on another level.

Our fave ribs make a return, our plum sweet chilli concoction, clings to our super tender meaty ribs.
Lush.
Plant-based alternative: Sticky Plum Corn Ribs
chicken and spring onion
We start off with an unholy amount of garlic and ginger and roast it to within an inch of its life.
This removes the acidity and enhances all them beautiful underlying flavours.
Add Chicken stock, oyster sauce and a touch of hoi sin that - whilst light - is also incredibly deep.
This sauce binds our charred chicken and spring onions off the grill.
It's a proper little summer delight.

beef and black pepper
A slight rework of a sixty favourite, sees our new style braised beef shin, paired with roast cabbage and onion, and all brought together with our sweet, spicey and oh so beefy glaze.
The shins are braised for 6 and a half hours so are just ready to fall apart at the first wave of a chopstick.
